Cranberry Orange Muffins

Where did all this snow come from?!  With last week being a sunny 40 degrees this week was surely not expected.  With the snow teeming over the balcony and the cars buried deep, this snow day gives me a perfect chance to whip up some tasty muffins with the ingredients already on hand; no grocery shopping today people!  It is definitely a pajama and Cranberry Orange Muffin kind of day.

1 egg

3/4 cup plus 2 tbs orange juice

1 1/2 tsp vanilla extract

2 cups flour

3/4 cup sugar

1/2 tsp salt

1 1/2 tsp baking powder

1/2 tsp baking soda

4 tbs cold butter

1 cup cranberries

brown sugar to top

First, to show you the ridiculous amount of snow we have.

Second, mise en place!

Beat the egg in a small bowl and then mix in the orange juice and vanilla extract.

In a larger bowl, whisk together the flour, sugar, salt, baking powder, and baking soda.

Cube up the cold butter and work it into the flour mixture with your fingers until it looks like wet sand.

Fold the orange juice mixture into the dry ingredients.

Gently fold in the cranberries.

Spray your muffin pan with Pam and pour in the batter.  Top each cupcake with a few extra cranberries and brown sugar.  Everything is better topped with brown sugar!

Bake at 350 for 40-50 minutes, or until a toothpick stuck in the center comes out clean.

Let them cool on a cooling rack.
