Happy Super Bowl Sunday! Every big game requires yummy snacks. These Jalapeno poppers provide a spicy, creamy, crunchy snack that is sure to please any Super Bowl enthusiast. Even if you are only in it for the commercials like me!
8 oz cream cheese, softened
8 oz sharp cheddar cheese, shredded
1/4 cup mayonnaise
2 eggs, beaten
1 tbs milk
1 1/2 cups corn flakes, crushed
Begin by halving the jalapenos. When handling these bad boys be very careful not to touch your eyes. You will instantly regret it.
Scoop out the seeds using a spoon. If you want spicy poppers, leave the ribs in. If you want mildly spice poppers, scrape out the ribs.
In a mixing bowl, mix together the cream cheese, sharp cheddar cheese, mayonnaise.
Fill the jalapeno halves with the cheese mixture.
In a bowl, beat together the eggs and milk. In another bowl, crush the corn flakes. Line a baking sheet with tin foil and spray with nonstick spray.
Dip each popper first in the egg mixture, then in the corn flakes. Make sure to press the flakes on well so they stick. Place them evenly on the baking sheet.
Bake at 350 for 30 minutes, or until bubbly and golden brown. Let them cool before chomping into them; they will be extremely hot when they first come out of the oven.
