Brown Sugar and Dijon Glazed Pork Loin

Happy St. Patrick’s Day everyone!  To celebrate the day I decided to cook something incredibly delicious yet amazingly easy to throw together.  This recipe only requires three ingredients making it the perfect meal for when you might have started celebrating a wee bit early.

1 lb pork loin

1/3 cup stone ground dijon mustard

1/4 cup brown sugar

salt and pepper, to season

Trim down some of the thicker areas of fat, but don’t take it all off.  Fat is flavor!  Season with salt and pepper on both sides.

Prepare a baking sheet with tinfoil and place a rack on top.  Put the pork on the rack and bake at 425 for 30 minutes.

Take the pork out and reduce the oven to 375.  Brush the dijon mustard over the pork and sprinkle the top with brown sugar.

Return to the oven for another 10-15 minutes or until the internal temperature reaches 175.  Broil the top of the pork for a few minutes until the top browns.

Let the pork rest for 10 minutes before cutting into it.
